After working with François Rousset-Martin in the Jura, Lorenzo Raffaglio headed to Alcamo to build his own Sicilian project. He farms local grapes himself, following organic principles on soils of limestone, clay and sand. In the cellar, he adjusts skin contact and ageing to the grapes, using small sulphur additions at bottling and keeping freshness at the centre of his work.
