Fried courgette flowers
The light fizz and citrus freshen the crisp batter.

Alla Costiera, Veneto, Italy
Green apple, lemon peel and elderflower with a soft fizz. It feels dry and fresh, with a little bitterness and a yeasty edge. A magnum for a table of friends and plates to share.
You’ll notice the gentle bubbles and a little savoury yeast after the fruit.
If you like apple-fresh bubbles with a softer fizz and a little yeast, try this bottle-fermented white.
Spontaneously fermented, rested in concrete and fermented again in the bottle.

SOMETHING SIMPLE
Dry apple and lemon balance the soft, tangy cheese.
FOR SHARING
Gentle bubbles lift the olive oil and echo the squeeze of lemon.
Try asparagus tart; the lemony edge freshens the pastry.
A sweet fruit crumble would make its dry, slightly bitter finish seem harder.

Filippo Gamba farms the land he grew up on around Vo’ Euganeo, where Veneto’s volcanic hills meet pale calcareous soils. Local grapes such as Garganega, Moscato and Raboso anchor a varied range. Organic growing, wild fermentations and time in concrete give the cellar its character, while the Sui Lieviti wines undergo a second fermentation in bottle.
