Pet Nat: The Wine That Never Quite Finished Fermenting
Cloudy, lively, slightly wild, and once you understand what's actually in the bottle, the most natural thing in the world.

Petillant naturel, pet nat for short, is the original way sparkling wine was made. The idea is simple: bottle the wine while it's still fermenting, seal it, and let the fermentation finish inside the bottle. The CO2 produced has nowhere to go, so it dissolves into the wine. No riddling, no disgorgement, no added sugar. What's in the bottle is exactly what the fermentation put there.
A pet nat isn't a Champagne that couldn't afford to finish school. It's a completely different idea of what sparkling wine is for.
What petillant naturel actually means
Unlike Champagne, pet nat has no riddling, no disgorgement, no added sugar or yeast. What's in the bottle is exactly what the fermentation put there. The result is a natural sparkle: softer than Champagne, more variable than Prosecco, and often slightly cloudy because the wine still carries yeast sediment from that in-bottle fermentation.
Why it tastes different from other sparkling wine
Champagne's defining characteristic is precision: controlled mousse, consistent flavour across millions of bottles. Pet nat's defining characteristic is aliveness: each bottle is a slightly different moment in the fermentation. The flavours tend to be more immediate and fruity, less toast and brioche, more fresh fruit and light yeast. Lower in alcohol, lower in pressure, gentler bubbles.
How to open and serve one
Open it cold and carefully: pressure varies by bottle. Keep your thumb over the crown cap as you ease it open. The sediment at the bottom isn't a flaw. Pour carefully and leave the last centimetre if you want it clear. Pet nat is the wine for before dinner, for picnics, for situations where Champagne would feel like an announcement.
Why pet nat is having a moment in the Dutch market
The generation of Dutch wine drinkers comfortable with craft beer's cloudiness and variation are also the people discovering that sparkling wine doesn't have to come from Champagne. The bottles in this guide are all made by small producers who take the methode ancestrale seriously. A different answer to the question of what bubbles can taste like.
