Pasta with sausage and fennel
Juicy fruit suits the sausage and fresh acidity lifts the sauce.

G.D. Vajra, Piemonte, Italy
Dark cherry, strawberry and a little hazelnut, with juicy fruit and fresh acidity. The tannins feel fine and lightly chalky. Mostly aged in steel, it is an easy bottle to open when the evening begins around the kitchen table.

SOMETHING SIMPLE
The nutty note meets the stuffing while the light grip suits the chicken.
FOR SHARING
Freshness balances the soft cheese and the fruit fits the tomato.
Try a courgette and tomato gratin; juicy fruit and a fine grip suit the browned top.
Very sweet sticky ribs would hide the fresh cherry and fine tannins.

The producer
At G.D. Vajra in Vergne, the Vaira family’s love of Barolo reaches beyond one famous grape. Nebbiolo sits alongside Dolcetto, Barbera, Freisa and even Riesling in a wide-ranging cellar. High vineyards and the cooling influence of the Alps inspire their search for perfume and finesse, while a history of organic farming reflects their long commitment to the land.
