SOMETHING SIMPLE
Lemon meets the citrus while the fine bubbles freshen the crisp coating.
FOR SHARING
The nuts echo the hazelnut scent and the acidity lifts the butter.
Parmesan gougères pick up the pastry and hazelnut side of the wine.
A sweet lemon tart can make the lively acidity feel sharper than intended.

Anthony Aubert and Jean-Charles Mathieu first met at school, then reunited over a glass and an idea. Their wine house works with selected growers across Languedoc-Roussillon, building each cuvée together rather than farming an estate of its own. Picking at dawn, native yeasts and carefully chosen ageing vessels serve their interest in freshness and balance. The mood is open and playful, with serious attention to how the bottles are made.
