If you reach for rosé for freshness, try this light red cool.

The producer

Aubert & Mathieu: Old school friends, fresh ideas for southern wine

Anthony Aubert and Jean-Charles Mathieu first met at school, then reunited over a glass and an idea. Their wine house works with selected growers across Languedoc-Roussillon, building each cuvée together rather than farming an estate of its own. Picking at dawn, native yeasts and carefully chosen ageing vessels serve their interest in freshness and balance. The mood is open and playful, with serious attention to how the bottles are made.
