AT THE TABLE
Salmon mousse on crisp toast
The wine’s texture meets the rich mousse and its salty finish keeps the bite fresh.

Alla Costiera, Veneto, Italy
Apricot and citrus, with a gentle grip. A short stay on the skins gives this wine a little texture, ending with a faint salty edge. A glass for grazing on small plates while the conversation wanders.
You’ll notice the light grip after the apricot and citrus.
If you like fragrant whites but want a little more texture, start with this gently grippy orange wine.
Brief skin contact, spontaneous fermentation and maturation in glass-lined concrete tanks.

SOMETHING SIMPLE
The carrots suit the apricot fruit and the yoghurt softens the light grip.
FOR SHARING
The cheese balances the texture while apricot echoes the wine’s fruit.
Salmon mousse on toast suits its light grip and fresh, salty finish.
A fierce chilli sauce can bury the apricot flavour.

Filippo Gamba farms the land he grew up on around Vo’ Euganeo, where Veneto’s volcanic hills meet pale calcareous soils. Local grapes such as Garganega, Moscato and Raboso anchor a varied range. Organic growing, wild fermentations and time in concrete give the cellar its character, while the Sui Lieviti wines undergo a second fermentation in bottle.
