SOMETHING SIMPLE
The herbal scent fits the filling, with enough body for the rice.
FOR SHARING
Lively acidity freshens each bite of the oily fish.
Try fried courgettes with tzatziki; the fresh acidity cuts through the oil and the herbs fit the dip.
Leave sweet mango chutney aside; its sweetness would fight the dry, resinous flavour.

The producer
At Gialtra in North Evia, the Vriniotis family's modern winery stands beside its old stone wine press. Their vineyards preserve the rare local red grape Vradiano alongside other Greek and international varieties. Spreading from Gialtra towards the foothills of Mount Telethrion, these family plots continue a story of revival rooted firmly in this corner of Evia.
