SOMETHING SIMPLE
The apricot note links the glass and the plate without needing a sweet wine.
FOR SHARING
Freshness cuts through the fried crust and the salty edge suits the savoury filling.
Try roast carrots with tahini; the juicy fruit meets their sweetness and the fresh edge lifts the sesame.
A very smoky barbecue sauce would hide the peach and salty finish.

The producer
Giuseppe Amato’s first vineyard purchase was an abandoned half-hectare of Nebbiolo found on a second-hand website. That unlikely beginning became Valdisole in 2015. With Kyriaki Kalimeri involved from the early days, the project keeps experimentation close to its heart: macerated whites, amphorae and wines bottled outside appellation rules give the pair room to explore their own ideas.
