Sea bass with fennel
Fresh lemon flavours brighten the fish and fennel.

Moinoterra, Crete, Greece
Pear and ripe lemon, with a scent like rain on warm stones. The sip feels rounded and creamy, then turns fresh and slightly salty. Pour it when you want a white with enough weight to linger over.
You’ll notice the creamy feel followed by a fresh, savoury finish.
If you like rounded whites with plenty of lemony freshness, try this lees-aged Vilana.
Fermented in stainless steel and rested on the yeast lees.

SOMETHING SIMPLE
The rounded texture matches the chicken, while citrus links wine and potatoes.
FOR SHARING
The creamy feel suits the cheese and the freshness balances the sauce.
Try spinach and feta pie; the creamy feel meets the cheese while the fresh edge lifts the pastry.
Keep fiery hot sauce away from this glass; it would hide the pear and subtle savoury notes.

In Archanes, south of Heraklion, Moinoterra picks up the thread of Crete's long wine history. Nikos Stathoglou's project focuses on local varieties and carefully chosen vineyards around Mount Juktas, with Assyrtiko as an additional exploration. Low yields, attentive fruit selection and restrained intervention in the cellar aim to keep each site's character clear in the finished wine.
