SOMETHING SIMPLE
Soft leeks and creamy potato suit the wine’s mellow feel.
FOR SHARING
The cheese matches the creamy texture and apple echoes the baked-apple fruit.
Chicken in a light cream sauce meets the rounded texture without burying the peach.
A sharply vinegared salad can make this gentle, creamy white feel flat.

At Marcel Deiss in Bergheim, different grape varieties grow side by side, then travel together through harvest and pressing. This old Alsatian practice, called complantation, lets the vineyard take the lead. Biodynamic work, covered soils and attention to birds and bees extend the same idea beyond the vines. The aim is a wine that tells you where it grew, with all the complexity of that living place.
