AT THE TABLE
Lamb chops with oregano
Silky tannins fit the meat and herbal notes join the oregano.

Jima, Epirus, Greece
Cherry and dark chocolate with a little clove. The tannins feel silky, and a savoury, pencil-lead note stays at the end. A barrel-aged red for a long dinner and stories that take a while to tell.
You’ll notice the silky grip and the pencil-lead edge after the fruit.
If you like smooth, barrel-aged reds with cherry and chocolate, try this Merlot and Cabernet Franc blend.
The grapes are fermented separately in open stainless-steel tanks, then the wine matures in wooden barrels.

SOMETHING SIMPLE
The layered fruit and long savoury finish suit the slow-cooked sauce.
FOR SHARING
The smooth grip and dark fruit give the firm cheese a generous companion.
Try a mushroom pie; the savoury finish and silky grip suit the filling and pastry.
A sharp citrus salad would clash with the chocolate and soft barrel-aged texture.

The producer
Panos and Kristy built Jima beside their family home in Kalomodia, surrounded by gardens and an old citrus grove. Their wines follow three very different corners of Epirus: the breezy Ambracian Gulf, the traditional wine villages of Zitsa and the cooler slopes of Konitsa. Local grapes such as Debina and Vlahiko give that journey its own accent.
