AT THE TABLE
Roast pepper and mozzarella salad
The red fruit and rosé-like feel suit the sweet peppers and gentle cheese.

ICARO, Genzano di Roma, Lazio
Strawberry and cranberry with a scent of lavender. Red and white grapes share the bottle, giving it a feel closer to a deep rosé. Try it lightly chilled when the table moves outside.
You’ll notice how much lighter it feels than its red-wine label suggests.
If you like a fuller rosé, try this red-and-white grape blend lightly chilled.
Spontaneously fermented with native yeasts, made in steel and wood, and bottled without filtering.

SOMETHING SIMPLE
Bright berries sit beside the pork while the floral edge leaves room for the herbs.
FOR SHARING
The lighter feel keeps this simple, savoury plate from becoming heavy.
Try chicken skewers with herbs; the bright fruit and floral notes keep the plate lively.
A long-cooked beef stew would bury its bright berry and flower notes.

Icaro began in 2019 when four friends from Rome fell for a vineyard near Velletri. Surrounded by woodland and open to sea breezes, their corner of the Castelli Romani became a place to learn from local growers. They work with the area’s grapes and spontaneous fermentations, pursuing a simple ambition: bring lively, approachable wines of the Castelli back to the people of Rome.
