SOMETHING SIMPLE
The fresh cherry fruit suits the delicate beef while the cheese softens the grip.
FOR SHARING
Juicy fruit meets the sweet squash, with enough freshness for the browned butter.
Try cannellini beans with mushrooms; the fresh fruit and chalky grip give the earthy beans some lift.
Fiery chilli would hide the rose and raspberry detail and sharpen the tannins.

The producer
At G.D. Vajra in Vergne, the Vaira family’s love of Barolo reaches beyond one famous grape. Nebbiolo sits alongside Dolcetto, Barbera, Freisa and even Riesling in a wide-ranging cellar. High vineyards and the cooling influence of the Alps inspire their search for perfume and finesse, while a history of organic farming reflects their long commitment to the land.
