Beef and thyme casserole
Slow-cooked beef softens the tannins and thyme echoes the wine’s herbal scent.

Dominio del Soto, Ribera del Duero, Spain
Blackberry and plum, with cocoa and a little liquorice. It fills the mouth, but the grip feels fine and silky rather than harsh. Twelve months in French oak add another layer to the fruit. A bottle for a long evening when you can settle in.
You'll notice the rounded fruit first, then a fine, slightly sandy grip.
If you like rounded reds with dark fruit and oak spice, start here.
Aged for 12 months in French oak barrels.

SOMETHING SIMPLE
The lentils meet the texture while the roast flavours suit the dark fruit and oak.
FOR SHARING
The firm cheese stands up to the body and the nuts suit the warm, woody finish.
Beef with thyme and mushrooms suits the juicy dark fruit and soft, firm texture.
A fiery chilli sauce can drown out the thyme and mocha and make the tannins feel rough.
16–18 °C
Dominio del Soto sits on old, high terraces above Sotillo de la Ribera, where hot summer days give way to much cooler nights. Established in 2005 and part of the Chapoutier family’s Spanish story, the estate farms organically and raises its roble and crianza wines in oak. Clay and limestone beneath the vines, together with that marked daily temperature swing, set the scene for its Ribera del Duero wines.
