SOMETHING SIMPLE
The firmer feel suits a roast with crisp edges.
FOR SHARING
The wine’s structure gives the rich cheese sauce a substantial companion.
Try roast turkey with buttered leeks; the barrel-built structure can meet a richer white-meat dish.
Very delicate cucumber bites would be overshadowed by this oak-aged white.

Dominio del Soto sits on old, high terraces above Sotillo de la Ribera, where hot summer days give way to much cooler nights. Established in 2005 and part of the Chapoutier family’s Spanish story, the estate farms organically and raises its roble and crianza wines in oak. Clay and limestone beneath the vines, together with that marked daily temperature swing, set the scene for its Ribera del Duero wines.
