AT THE TABLE
Grilled cod with lemon butter
Fresh citrus lifts the butter and the rounded middle suits the fish.

Domaine de Cassaigne, Gascony, France
Lemon, peach and passion fruit, with a small smoky note behind them. Fresh at first, then rounder across your tongue before the bright fruit returns. An easy glass for lunch that carries on into the afternoon.
You’ll notice the rounder middle between the fresh first sip and lively finish.
If you like bright citrus whites but want a little roundness in the middle, try this Gascogne blend.
Part of the wine is fermented in barrels.

SOMETHING SIMPLE
The peach note links the fruit and the wine’s freshness keeps the salad lively.
FOR SHARING
The round feel meets the soft peppers and acidity balances the cheese.
Try a warm goat’s cheese salad; the fresh edge balances the cheese while the roundness suits the toast.
A rich chocolate dessert would smother the lemon and passion fruit.

On the limestone heights of Cassaigne, six winegrowing families look after land once devoted entirely to Armagnac. Plaimont’s purchase and vineyard renewal brought a new chapter: distinctive red and white Gascon wines alongside the estate’s older speciality. Local grapes such as Gros Manseng and Manseng Noir belong to that story. Cover crops and carefully timed treatments keep the work rooted in the needs of this particular plateau.
